A FORMER Premier League footballer has revealed plans to open up an Italian restaurant in one of Scotland’s largest towns.
Ruby’s is set to become the latest addition to the East Kilbride food scene, with an opening date set for later in the year.

The man behind the development is ex-Scotland international James McArthur.
A Rangers fan in his youth who was raised in the Dennistoun area of Glasgow, McArthur made his name playing for Hamilton in the noughties – not far from East Kilbride.
He moved from the Lanarkshire club to the Premier League with Wigan Athletic in 2010, becoming a hero with the Greater Manchester side by playing his part in their 2013 FA Cup final win over Manchester City.
McArthur would later sign for Crystal Palace and played over 250 times for the London outfit.

He earned 32 caps for Scotland and scored four goals and retired from the game in 2023.
Now 38, McArthur has teamed up with Struan Barclay to open Ruby’s.
Barclay’s family come from a hospitality background and the pair have already started gutting out the former Coppertrees Bar & Grill site on St James Way.
They have plans for a 100-plus cover restaurant and adjoining bar, with menu items such as vodka rigatoni and pizza that diners can look forward to.
A website for the new venue is up and running, with a statement reading: “East Kilbride, we’re on our way and we can’t wait to meet you!
“Ruby’s is your new go-to spot, from easy breakfasts and relaxed lunches to family dinners, big celebrations and nights that buzz with energy.
“Expect stylish interiors, bold flavours and a buzzing vibe.
“From hand-stretched pizzas and rich vodka rigatoni to small plates made for sharing and hearty classics — all paired with perfectly poured coffee, curated wines, cocktails that hit just right and of course a great pint!
“Sign up now to be first in line for opening news and launch events!”
A social media post from the restaurant showed McArthur and Barclay looking at floor plans, and teased that the restaurant will open in December.
The Instagram post read: “Meet Struan & James – the team behind Ruby’s.
“The guys are working hard with an incredible project team to bring your new local to life – opening early December!
“From easy breakfasts and relaxed lunches to family dinners and nights that buzz, Ruby’s is where it all happens.”
